  MOZZARELLA
 

Pure white, egg shaped fresh soft cheese made from buffalo milk (Mozzarella di Bufala) but also from cow's milk (Fior di Latte). It has a moist, springy texture and a sweet and nutty salty flavour and it is perfectly white.

The cheese has been made in Italy since the thirteenth century and the same techniques used then are still used today. Mozzarella can be also smoked, which gives it a golden-brown colour and an interesting flavour.It is the best melting cheese, suitable for topping of pizzas, timbales of pastas or filling for sandwiches, but also delicious uncooked and sliced with red tomatoes and fresh green basil dressed with oil, salt and pepper.

OUR IQF FROZEN MOZZARELLA

Quality:

  • 100% produced in Italy;

  • obtained only by pastourized whole milk;

  • no preservatives, no citric acid, only natural live milk enzymes (natural process);

  • singly frozen with the right degree of humidity and fermentation;

  • consistent quality and milk taste as at the time of production;

  • integrity and perfect preservation for at least 12 months;

  • same texture of a just fresh made mozzarella;

  • easy to digest.

Economic and Logistic:

  • for long distances can be shipped by vessel instead of by plane (lower freight)

  • lighter packaging and lower transport costs due to lack of water

  • easier portioning and distribution

THAWING PROCEDURES

The thawing of all our IQF frozen Mozzarella's formats can be realized at environment's temperature of preferably in the refrigerator (+ 4°C). It is of high importance that during the thawing phase the product does not come into direct contact with air and it is highly suggested to keep it inside its original packaging.

Specifically in case of the 5 gr cherries and the 100 gr Mozzarella, an excellent result can be reached with the dipping of the unpacked still frozen product in fresh water, allowing a slow and gradual thawing.

The thawing's average time ranges from two eight hours depending on the environment temperature and on mass, size and weight of each product/ packaging. Shelf life after defrost is fixed in 4 days in fridge.
