Fresh cow's-milk Italian cheese with a washed rind and a soft centre; has a mild and delicate flavour and a creamy texture and contains about 50% of milk and fat. Produced mainly in a Northern region of Italy (Lombardy), Stracchino is a very popular cheese in Italy and is currently produced almost solely on an industrial basis. It is used mainly for pizza, pasta, risotto, or baked into focaccia or simply used as dessert cheese with fresh fruit. When fresh must be consumed within few days from purchasing, which is normally 8-10 days after it has been made.
