Mascarpone is a pure double-cream cheese made in Northern Italy. It has a creamy texture and a slightly acidic taste, similar to clotted cream or crème fraiche. Although a number of varieties are available abroad, none have quite the same exquisite taste and finess of the freshly made Mascarpone you can buy in Italy's many speciality cheese shops.
Mascarpone is made from the cream of curdled cow's milk. It is seldom used as cheese, butis extremely valuable as ingredients for sweets, as filling for pastries and for desserts, one the most famous being Tiramisù; it is also used in cooking and in baking particularly in saucess and creams. It makes wonderfully creamy sauces for pasta and combines well with walnuts and artichokes.
