Barbaresco is related to Barolo, even if Barbaresco winemakers produce this wine with specific procedures, based on a long maceration process. The result is a noble, austere wine to accompany tasty gourmet recipes: truffled cheeses, rich risottos, roastbeef, grilled fine sausages, cured meat.
Grape variety
100% Nebbiolo grapes. "Nebbiolo" derives from nebbia (fog), given that this grape's harvest traditionally occurs in the fall (mainly in October). Organoleptic output depends on the physical and chemical features of the soil.
Growing location
Nebbiolo grapes from south-facing vineyards in the hills near Barbaresco (near Alba, southern Piedmont); compact grey marl soil with periodic grass regeneration and organic fertilization. Arched-cane Guyot vine grafting system and reduction of bunches before ripening.
Vinification
· Grapes are harvested by hand when ripe;
· 10-12 day alcoholic fermentation with frequent must pumping, and plunging of the cap below the surface; careful treatment of malolactic fermentation.
· Aging in oak medium-size casks for about 1 year and in bottles for another year before distribution.

Brilliant, deep ruby with garnet highlights.

Intense and spicy, tending to ethereal; ca 12-13%.
Taste and serving temperature
Full-bodied, austere wine, with velvety nuances, rich in tannin; ca 18°C.
