Another great red wine of the Veneto region made from semi-dried grapes, of the same varieties as Amarone. Thus, Valpolicella has the same intense taste of Amarone, but a little less dry, with hints that recall other renowned Veneto red wines (Recioto for example). The culinary recommendations are similar: try with ripe cheeses, fine cured meat, goose liver pâte, roasted meat and game.

Ca 60% Corvina Veronese; other grapes cultivated in the Verona hills (Rondinella; Molinara, etc.).
Growing location
Vineyards in the Valpolicella country, in the province of Verona; lime soil.
Vinification
· Grapes are harvested by hand in September/October; they are selected and put in containers, inside open-sided rural buildings for 1 month (drying procedure);
· In November these slightly-dried grapes are pressed; must (with grape skins) ferments in stainless steel tanks at low temperature for 20 days.
· Aging in medium-size oak casks for about 18 months; maturation in bottles for a minimum of 6 months before distribution.

Ethereal fragrance with hints of cherry, hay and sometimes almonds; ca 13-14%.
Taste and serving temperature
Full-bodied, ethereal, dry, rich with slightly-fruity, almond-like pleasant aftertastes; ca 16-18°C.
