Grape Variety: Sangiovese, canaiolo

 

Silvery olive trees dot cypress-studded hills cultivated with Sangiovese grape vineyards. By now, the typical landscape between Florence and Siena has no need of wordy descriptions, having earned the international denomination of Chiantishire. Try Chianti Classico with cheeses, cured meat, Tuscan-style soups (beans, grains, …), roasted meat, game, grilled red meat.

Grape variety
Ca 90% Sangiovese; ca 10% Canaiolo.

Growing location
Vineyards in the hills of the Chianti region.

Vinification
· Grapes are harvested by hand in September/October; steeping of grape skins in the must
· Fermentation at controlled low temperature
· Aging in medium-size oak casks for a minimum of 4-6 months; maturation in stainless steel container and bottling during the second year; additional maturation in bottle for 4-6 months before distribution.

Color
Intense ruby, garnet reflections.

Bouquet and alcohol rate
Clean, with hints of violet; ca 12-13%.

Taste and serving temperature
Full-bodied, velvety, slightly dry; ca 16-20°C.
